Have fun playing with options for flavouring – pretty much anything goes!
- cinnamon/Contreau/white chocolate/toasted almonds and mixed peel
- mixed spice / brandy / dark chocolate / macadamia nuts
Gluten free crackers can be used if desired.
100 grams Salada crackers
225grams butter, diced
¾ cup brown sugar
½ teaspoon of spice of choice
¼ teaspoon sea salt
2 tablespoons liqueur of choice
200 grams chocolate, chopped
½ cup chopped nuts and/or dried fruit
Preheat the oven to 180°C.
Line a 38x26cm swiss roll tin with baking paper, making sure it comes up the sides of the tin to contain the caramel.
Place butter, sugar, spice, salt in a medium saucepan and bring to the boil, stirring to dissolve the sugar.
Add the liqueur and let it bubble up for one minute, stirring constantly until thick and glossy. Pour over the crackers, spreading evenly so they are all covered.
Bake for 8-9 minutes, until bubbling and a golden colour.
Remove from oven and if they have displaced, gently push them down with a fork to an even layer. Scatter over the chopped chocolate and return to the oven for one minute, then spread the chocolate evenly over the crackers.
Sprinkle on your chosen fruit/nut topping and leave to set
